There are a couple of Ini Studio Cafes in Melbourne, including one in Carlton and one in Collingwood. The original location is the one at Carlton. Both have an all-white, modern design with a minimalist interior with white cube furniture and an open coffee bar. We were recommended INI Studio by our friends and it has rapidly become our go-to cafe when we are in town. It is founded by award-winning barista Kiyong Jung and is most well known for its pour over.

They have a selection of Gesha beans and other single origins that are sourced from both local and international roasters. They do also roast their own beans under the Secondipity Roasters label. Our preference at INI is always their Gesha beans. The baristas there do an exceptional job of curating their beans and do magic in extracting the complex floral and sweet tea likes notes from their Gesha beans.

We visited both the Carlton and Collingwood branches and had the following:
Colombia El Diviso Geisha - Honey process, 1700-1800 MASL with notes of orange, chamomile, cherry, cane sugar
Nicaragua La Bastilla Estate Geisha - Natural process, 1100-1450 MASL with notes of Raisin, lychee, vanilla, hazelnut
Colombia Cerro Azul Geisha - Natural process, 1650-2000 MASL with notes of pinot noir, peach candy, melon, cacao nibs
Tanzania Finagro Geisha - Washed process, 1650-1800 MASL with notes of jasmine, elder flower, green apple, watermelon
Personally, we had Kiyong Jung make our drinks at Carlton and it was just magically. The flavours shone through and of course the beans were different between our two visits, but we were blown away by the delicate flavours he was able to extract and therefore partial to the Carlton branch.
Would We Recommend?
Yes! Yes! Yes! This has quickly become one of our favourite roasters in Melbourne for Gesha beans. We visit and everytime, we also buy. It is not cheap, as you would expect for Gesha beans, but the team always delivers.
