Pizza Studio Tamaki, or PST is a famous pizzeria that has Tokyo-Neapolitan style pizzas. It was founded by Tsubasa Tamaki and has since built a strong reputation internationally, including listings in the Michelin Bib Gourmand as well as the Top 100 Pizzas in the world.
What is so special you might ask? The pizzeria uses a unique dough made from a proprietary blend of high hydration Japanese flour and undergoes a 30 hour fermentation process to get a pizza crust that is puffy yet thin and chewy in the center.

We arrive famished and did not actually make a reservation mid week, thinking we could easily get table. We did get a table, however, only tables outdoors were available as the restaurant was fully booked. After putting our orders through, our servers dropped by with a little cup of mushroom soup to start out evening.
Very shortly after, our pizzas arrived. We ordered 2 pizzas, Tamaki, which is their signature as well as the Special Bianca:
Tamaki - Datterini tomatoes, fresh smoked mozzarella, pecorino romano, fresh basil
Special Bianca - Fresh burrata, fresh buffalo mozzarella, mascarpone, truffle oil
The pizzas come with instruction and we loved smearing the ingredients. The crust is nicely charred and the middle gooey, which they term a "delicate center" There is an option to request for less char or less salt. We went with standard and thought that is was just right.

We really enjoyed both pizzas. It is a slightly different style and definitely has a Japan vibe to it. There is a freshness of the produce shining through and a noticeable but subtle smoky flavour with the Okinawan salt coming through. The flavours are delicate and never overpowering, with both pizzas tasting very different.

After the pizzas, we decided to have the Omakase dessert set, which is a selection of 2 chef's choice dessert. Tonight we get Tiramisu as well as Pannacotta. Both house made with the Tiramisu being really nice and fluffy which rich coffee and cocoa flavours. The pannacotta was OK, nothing to shout about, but a nice balance to the Tiramisu. Next time, I will likely pass on the desserts.

Booking
Definitely make a reservation for PST Singapore. We rocked up early on a weeknight and had only one of two available outdoor seats available.
Accessibility
The closest MRT is Maxwell Station which is a 2 minute walk away.
The Damage
Our meal was ~ 125 SGD for 2 pizzas and 2 dessert plates. Not cheap, but not expensive either. We definitely left really full.
Would We Recommend?
Yes! Pizza Studio Tamaki has it's own distinctive Tokyo-Neapolitan style. With its expansion into Singapore, PST sits in the bracket of must visit for people who want a clean Japanese expression of pizza.
