Latido Review - Colombian food in the heart of Singapore

Once you walk into Latido, you are greeted by a modern space with dark wood panels and Colombian decorations. The space is spilt into 2 distinct areas, with one end of the restaurant featuring a long chef's table and the second area which is more private. Latido claims the title of being Singapore first Colombian restaurant which is a cuisine that is probably quite unfamiliar for many.
We are very familiar with Chef Fernando Arevalo, having been to his previous Michelin star restaurant Preludio multiple times. I think back on Preludio very foundly and always looked forward to the new chapters that Chef Fernando created. Unlike Preludio, Latido is meant to be a space to celebrate a more casual and accessible approach to Colombian cuisine and we were definitely very excited to try it.

Our visit was during lunch and Latido serves up a 4 course set menu for 48 ++. For the two of us, we managed to try most of the menu:
Pan de la casa - Signature Rye Bread
Starter #1 Ceviche de gambas - Argentinian Prawn, Leche de Tigre, Panela
Starter #2 Patacon con chorizon - Spicy Sausage, Green Plantain, Oaxaca
Main #1 Calentado - Iberico Pork, Acquerello Rice, Pork Sauce
Main #2 Percha a la parilla - Hanger steak, Chimichurri, Andes Potato
Plantainitos - Plantains, Cake of Dates, Coffee and Rum, Burrata Ice Cream

We were so delighted to see the rye bread on the menu. This features a fermented mushroom truffle glaze with a onion butter which is so sinful, so fluffy and absolutely delicious. This is the same bread that was served at Chef Fernando's previous establishments and definitely one to look forward to. Chef Fernando has also since opened a specialised bakery called Boronas which is located at Asia Square for those who are interested. We highly recommend it, it is so so so good.

The starters were classic Colombian dishes, a zesty refreshing ceviche to kick start our palate followed by green plantain with spicy chorizo and oaxaca cheese. We then moved on to our mains which which had Calentado, which is considered a traditional breakfast dish. It is very hearty with chunky pork pieces, deep nutty flavours as well as plantains. Our second main was a Hanger steak served with Chimichurri and a side of Andes Potatoes. The beef was beautifully cooked and those super fluffy Andes Potatoes that were served along side were bursting with flavour. It is a very interesting experience for us to have elevated Colombian comfort food and definitely something we are not too familiar with.

Accessibility
Located at Tras street, the closest MRT would be Tanjong Pagar MRT and a short 5 minute walk from the train station.
The Damage
We paid 148 for 2 lunch sets that included one supplement for the hanger steak. We also ordered 2 wines, which the team was very sweet to not charge us as service was slightly slow and we took quite a while to receive our mains. It was not such a big deal to us, but it was a very nice service recovery which we appreciated.
Would We Recommend?
Yes. Latido is a new concept in Singapore, with Chef Fernando bringing in a little bit of his home culture to Singapore. Whilst I wouldn't consider the Latido now to be serving amazing, mindblowingly good South American food, South American cuisine in Singapore is as rare as a unicorn although it is an amazing cuisine that deserves to be celebrated. Having seen what Chef Fernando has done before, I am sure he can make this place absolutely amazing. Since opening, Latido has already earned recognition in the Michelin guide Singapore edition and it would definitely be nice to see what Latido can offer in the future.
