Skai Restaurant Review, L70 Sky High View of Singapore

Perched on Level 70 of Swissotel The Stamford, you take an unassuming lift behind the hotel brasserie up and get greeted by one of the most spectacular dining views in Singapore - a sweeping panaroma that stretches from MBS, Gardens by the bay, Clarke Quay and beyond. Few spots in Singapore can match this vantage point for atmosphere alone.

We visited on a Tuesday evening, arriving early at 5.30pm for a 6 pm reservation. Despite the restaurant being barely 10 % full at that time, the staff politely held us at the waiting area until just before our reservation time. It seemed to be the trend for the evening. The wait staff was extremely delightful, but the wait time seemed a little long, in between entrees and mains, in between mains and the bill. It didn't dampen our mood, just a point to note that this is not a quick dine type of establishment.

We were seated at one of the high tables. At Skai, there is a huge variety of different types of seatings: Bar seats, high tables, standard tables, booth seatings. If you have a preference, I would highly recommend putting your request in the reservation notes. We saw an elderly couple arrive in the middle of my meal and unfortunately they were placed at a high table which was very inconvenient for them. They did request for a standard table, but by that time, the restaurant was almost full and the only other seats they could get was at the bar.

The restaurant menu is an interesting mix of grill as well as Japanese inspired dishes, including a specialized tuna bar. They also have a dedicated artisanal beef section cooked over binchotan. We dined at Skai restaurant as part of the Amex Love Dining program, which is 50 % off for 2 diners for the entrees and mains section of their menu, but unfortunately for us, the tuna bar as well as the artisanal beef section was excluded.


We ended up having:

  • Seared Foie Gras with Fig, Balsamic Vinegar and Honey

  • Barramundi with Smoked Trout Roe, Cucumber and Dill

  • Grilled Gundagai Lamb Chop with Piperade

  • Creamed Hokkaido Corn with Togarashi and Lime

The team started us with some warm and fluffy housemade bread, which was absolutely delighted. We then started our meal proper with the seared foie gras. Though artfully plated, the strength of the balsamic and the sweetness failed to complement the richness of the foie. "Mid" felt like the right descriptor between us, beautifully presented but not memorable.


For mains, we shared the barramundi with smoked trout roe, cucumber and dill and the grilled Gundagai lamb chop with piperade. The lamb was the more confident dish of the 2, seasoned just right and cooked to a tender edge. The barramundi, despite its freshness, suffered from a sauce that was a little too acidic and soupy to complement the fish. The creamed Hokkaido corn on the other hand, was absolutely delicious. The subtle kick from the togarashi and hint of citrus from the lime was a fantastic little side.


We paired the meal with a glass of Chablis, as recommended by the sommelier. It was nothing exceptional, but crisp enough to carry through both the fish as well as the lamb chop dish.

By the time we were done with dinner, the sky was lit up and the beauty of the Singapore skyline was right in front of our eyes.


Booking

Definitely book. By the time we were done with our meal at around 7.30, the restaurant was full. If you are using Amex Love Dining like us, remember to indicate in your dining reservation. We also used this chance to redeem our free wine vouchers. Side note, they give the same wines as Prego does, but the food is definitely much better.


Accessibility

Located right at Raffles City, it is accessible from City Hall MRT. Once you are in the lobby of Swissotel The Stamford, look for Stamford Brasserie and walk through the corridor until you see the lifts that bring you up either to Skai or Jaan.


The Damage

With the Amex Love Dining promotion, we received 50 % off selected a la carte dishes. With taxes and service, a glass of wine and a bottle of sparkling water, our bill came up to 155 SGD, which is a fair price considering the view and overall experience.


Would We Recommend?

Yes, but with caveats. Go for the view, not for the culinary fireworks. The food is OK, the service polite, but the sunset is unforgettable. At full price, Skai lands on the expensive side, but if you have access to Amex Love dining's 50 % discount, it becomes a genuinely worthwhile spot to impress a friend, a date or a visiting guest.
