Beta KL is located in Cormar Suites, a very interesting location to be in. Beta is headed by Chef Raymond Tham and an attempt to represent Malaysia's regional flavours into a fine-dining journey, though through a noticeably cosmopolitan lens.

Inside, the restaurant feels like a private performance. Dimly lit and theatrical, the staff orchestrates each course like a scene change. We start off with a huge bar area with old chinese medicinal cabinets up the top and a lush velvet seating area reminiscent of an old opium den decked like an arena. My words don't do this justice, but the pictures do. We start off our dinner at this area where we are served the first plates served from a wheelbarrow full of plants. Yes, you heard that right. When I said theatrical, I meant it exactly.



Our menu for the evening is big and represents a tour of Malaysia:

    3. Corn with Kulim and Aioli

  3. East (Kelantan, Terengganu, Pahang, Sabah and Sarawak

    1. Laksam with Long Beans, Starfruit and Mushroom Garum

    2. Scallop with Pinasakn and Tuhau

    3. Beef Short Ribs with Masak Hitam, Acar and Kadok

  4. Central and South (KL, Selangor, N. Sembilan, Melaka and Johor)

After a big night of alcohol at Akar the day before, we decided to be light on the alcohol. We start off with just one cocktail. A Tropikambola which is described as refreshing, umami and salty containing gin, galliano liquer, fermented starfruit and lemon.


My partner chose a Zero Proof Pairing which consisted of:

  • Sparkling Tea

  • The Basil Grass which was a Dry London Spirit, Lemongrass Tea, Lime and Kemangi

  • Berry Agavita, Agave Blanco Spirit, Mulberry Leaf, Celery Pineapple and Egg White

  • Farmers' Harvest of Italian Spritz, Orange, Apple Cider, Jujube, Cinnamon and Nutmeg

  • Cocofine Sip with White Cane Spirit, Pandan, Monkfruit and Toasted Coconut


The performance continues through the night as we get whisked into a separate more subdued dining area with a semi open kitchen. There are dishes with liquid nitrogen fogging across tables, sorbet spun out of mist in front of diners and clouds literally wafting at your face. It is definitely visually arresting, but after the third flourish, you beginn to wonder if the magic is disguising something else, the importance of the flavours Beta KL is attempting to carry forward.


Beta's menu aims to be an edible travelogue across Malaysia's states, but the flavours often feel dialled down -more whisper than statement. For a restaurant that champions Southeast Asian ingredients, this restraint leaves one longing for spice and intensity. Ironically, the standard dish was not even meant to be a dish: midway through, guests are serve the chef's grandmother's lotus root soup, an unassuming palate cleanser between courses. Warm, deeply savoury and nostalgic, it's the one dish that feels entirely confident, rooted, literally and figuratively.


Our stand outs for the night were the cassava bread, pillowy and served with its own very delicious red chili emulsion as well as the beef short rib, which was tender and carefully glazed. Both these dishes illustrate the kitchen's strengths. For us, where Beta focuses on simplicity and texture, it simply excels.


At RM 1950 for 2 pax with just one cocktail and a non alcoholic pairing, Beta demands luxury level justification. For locals familiar with Malaysian and regional kitchens, the muted flavours feel like an elegant but sanitized version of Malaysian fine dining. Yet for travellors, we can see it being an approachable introduction to the country's vast culinary spectrum, without the heat, spice or cultural context that can otherwise overwhelm newcomers.


Where Beta truly shines is service. Every interaction is warm and considered. Staff check in often, replenish soup and bread with seconds and even notice special occasions. On this occasion, we visited near Valentine's day and the team took our photos several times. At the end of the meal, they slipped us a printed card with our pictures into a thank you envelope, a small but genuinely heartfelt gesture that embodied Malaysian hospitality.

Would We Recommend?

Perhaps selectively. Beta is impressive in staging and service, a comfortable way for visitors to sample Southeast Asian flavours in an approachable form. For Malaysians or seasoned diners chasing authenticity and boldness our region has to offer, it may feel like watching a cultural performance from the sidelines - beautifully executed, but missing emotional punch. There is definitely more to Beta, with some dishes stripped down to bare bones that hit and lingered. But this menu was not it.
