A Review Of Poise Restaurant: Elegance and Precision

Chef Steve Lancaster's is bringing refined European dining into his beautiful restaurant that features a modern, sleek dark look with a beautiful open kitchen. Within a year of opening, Restaurant Poise has already snagged its first Michelin Star and it is easy to see why in the dishes that we were served. The precision and the delicate balance of flavours was truly a pleasure. We managed to snag a table near the kitchen and got to watch him and his chefs work magic through the night, which we thought really added to the experience.



Our starters included a parfait tartlet, cheese sable as well as tartare. Classic, modern and well balanced in flavours.



Our next dishes were:

  • Scallops with N25 caviar, horse radish and dulse (a form of seaweed)

  • Chicken drumlet in bacon and onion foam

  • Fermented potato with buckwheat, chives and caviar

  • Monkfish with leek and turnip

  • Brittany pigeon served with plum and fennel



This dish was such a delight. I thought i should showcase it separately. Called Chicken, the bone separates from the chicken which is beautifully cooked. Plenty of juices and flavour and was the dish of the night for us. Although the potato and pigeon also stood out for us.



Restaurant Poise had an exceptional wine list and to complement the night, we had a 2011 Chateau Pichon Longueville Comtesse de Lalande Reserve de Comtesse de Lalande from Paulliac as well as a 2022 Sur La Lune Clos Du Gravillas Syrah from Languedoc-Roussilon. Both fantastic and paired nicely with our meal.



Our desserts for the night was called apple, which is made of lemon posset, granny smith apples and a shiso sorbet. The second dessert was called Fig. A really light yet grand fig dessert with lapsang souchong and guanaja dark chocolate mousse with a bee pollen icecream.

And of course our petit four which was as delicious as beautiful looking.


Accessibility

We highly recommend not driving. Restaurant Poise is very conveniently located close to Neil Road, so there are plenty of bus options or a 4 min walk takes you to Maxwell MRT station.


Price

We visited Restaurant Poise as part of Citi Prestige Haute Dining Promotion and paid 172 SGD (GST and service inclusive) per person for a 7 course meal, wines not inclusive. The regular 7 course meal is priced at 238 SGD ++ and therefore, the deal we received was absolutely worthwhile.


Would we recommend?

Yes we would! At 238 SGD ++, it is a very reasonably priced meal as we start to see Michelin Starred restaurants charge in excess of 3XX ++ these days. Chef Steve Lancaster is clear in his vision and has clearly brought his experiences from the Fat Duck, Saint Pierre and Oaxen Krog with him. The food is precise and comforting and a nice modern reset in the busy Singapore dining scene.
